Cupcake Galaxy

INGREDIENTSCupcakes


  • 200g all-purpose flour
  • 1 teaspoon cocoa powder (leave if you want a bright blue cupcake)
  • 160g of caster sugar
  • 1 tsp baking powder
  • 1/2 teaspoon baking soda
  • ½ teaspoon salt
  • 95ml vegetable oil
  • 2 eggs
  • 150ml of buttermilk
  • 3 drops of sky blue food gel
  • 2 teaspoons vanilla extract

Frosting (ice 20-24 cupcakes)

  • 500g unsalted butter (room temperature)
  • 1020g soft icing sugar mixture (sifted after weighing)
  • 2 tablespoons milk (room temperature)
  • 1 teaspoon vanilla extract
  • PURPLE: 2 drops of pink food gel in 2 drops of purple food gel
  • BLUE: 2 drops of sky blue food gel
  • PINK: 2 drops of deep pink food gel
  • Sprinkles - I use something shiny and shiny!
  • non-toxic glitter stars, sprinkles of white stars. Any galaxy or space themed! Pop rocks can also be used.


INSTRUCTIONS

Froze up

  • Use a stand mixer or hand mixer to soften the butter in a large bowl and mix for 5 minutes so that the volume and color are pale.
  • Add half the icing sugar mixture and stir until it is mixed into the butter, then add the remaining icing sugar together with 2 tablespoons of milk and one tablespoon of vanilla extract.
  • Separate into four separate bowls. To make purple ads 2 drops of pink food gel and 2 drops of purple food gel. Mix until evenly mixed. To make blue frosting, add blue food gel, repeat and to make pink frosting add pink food gel. Leave the fourth bowl plain white.
  • Cupcakes
  • Preheat the oven forced by the fan to 160C (320F) or 180C (356F) for a conventional oven. Cover cupcake cans with cupcake liners.
  • Add flour, sugar, cocoa powder (optional), baking powder, baking soda, and salt to a large bowl and stir at low speed to help all join together. You can filter it if mixed by hand.
  • Add eggs, oil, buttermilk, vanilla, and blue food coloring to a large jug and whisk until evenly mixed.
  • Slowly add the buttermilk mixture to the dry ingredients while mixing at low speed. Once all the wet ingredients are there, stop the mixer, scrape the bowl, and mix for the last 20 seconds.
  • Place it in a cupcake pan coated with cupcake paper, fill in about ½ direction and bake for 30 minutes. Cupcake will look shiny and moist on it. If it bounces and doesn't sink when you touch it, it's done! Set aside on a cooling rack to cool completely before freezing.
  • After chilling, center the center of each cupcake and fill it with stars
  • To prepare your piping bags: cut the ends from plastic disposable piping bags or wrench bags and fit with Wilton 6B piping tips. Put the bag in a glass for easy freezing. Add 1 teaspoon each colored frosting in the bag until the bag is filled just above halfway.
  • Frost each cupcake in the mixture until finished with a sprinkling of glitter and a sprinkling of stars
