Strawberry Cream Puff
"Imagine a puff of strawberries and cream guaranteed to be fun.
INGREDIENTS
- 1 cup of all-purpose flour
- 3 1/2 ounces of milk
- 3 1/2 ounces of water
- 2 teaspoons of sugar
- 1/2 teaspoon of salt
- 5 1/2 tablespoons unsalted butter
- 4 eggs

- 2 cups of thick cream
- 1/3 cup of powdered sugar
- 1 teaspoon of vanilla extract
- Fresh strawberries, cut into pieces
INSTRUCTIONS
- In a pan, simmer milk, water, sugar, salt and butter.
- Remove from heat and add flour at once and combine mixing vigorously with a wooden spoon until homogeneous.
- Return the pan over low heat and stir for cooking for 1 minute or 2 minutes to remove water vapor from the mixture and pull it from the side of the pan. You will see some dough sticking to the bottom of the pan.
- Transfer the mixture to a large bowl and let it cool slightly. Add eggs one at a time, carefully adding each to the mixture using a wooden spoon or even a standing mixer. This will produce a smooth and homogeneous mixture that still has a shape.
- Place the cake bag with a 1/2 inch big round tip and the dough pipe into 1 1 1/2 inch circle on baking paper coated with baking paper.
- Preheat the oven to 350 degrees. Bake for 25 to 30 minutes or until browned and bloated.
- Skew each with a skewer to release steam and let it cool on the wire rack.
- In a large bowl, whip the cream with an electric mixer until it forms a stiff peak. Add powdered sugar and vanilla extract and stir until blended.
- Divide the cream puff in half and fill with a mixture of cream and strawberry slices. Dust with refined sugar and serve.
