White Squid Balado


Ingredients :


  • 300 grams of medium-sized fresh squid (if large, can be cut)
  • 3 orange leaves
  • Right amount of oil
  • Enough water



Ground spices :


  • 3 red chilies (if you like it spicy can be added)
  • 2 wuluh star fruit (can be replaced with young mango)
  • 6 shallots
  • 3 garlic cloves
  • 2 red tomatoes
  •  ½ teaspoon of flavoring
  • Adequate salt (to taste)
  • Adequate sugar (according to taste)




How to cook :


  • Clean the squid first by removing the ink bag on the squid, so that the squid looks white if it is cooked. Then wash until thoroughly clean and drain.
  • Heat enough oil on the pan then fry the squid that has been cleaned until it's half cooked, the jagna is too dry.
  • Blend all ingredients until they are completely smooth. Use a blender or press according to your taste.
  • Prepare a frying pan and then saute the spices that have been mashed together with the citrus leaves until they produce a delicious smell.
  • Put the squid back in the sauteed seasoning, then stir all the ingredients until they are completely evenly distributed.
  • Serve squid balado on a serving plate.
  • Serve in warm conditions
