Kawaii Pastel Cake

INGREDIENTS
- 125g digestive biscuits
- 60g butter, melted
- 400g cream cheese, soft
- 100g icing sugar
- 4 tsp vanilla extract
- 600ml double cream
- 7 gelatin leaves
- 75ml boiling water
- Food is pink, purple, blue, yellow
- 200ml double cream, shaken
- Unicorn sprinkles
INSTRUCTIONS
- Coat the bottom of the tin spring 9 'with heat-resistant paper.

- Add boiling water to a small bowl and add the soaked gelatin. Stir until dissolved and there are no lumps. Add to the mixture of cheesecake and mix well.
- Divide the cheesecake mixture evenly into four bowls and hue with different food coloring using a toothpick to adjust the color intensity.
- Pour the blue mixture on the base of the biscuit and freeze for 20 minutes, making sure the layer is completely frozen before adding the next layer. Repeat with the other three colors then after the final freezing period, cool for 4 hours.
- Serve: after tightening, remove the cans and gently garnish using whipped cream and a unicorn topping.
