Perfect crepes






"Do you know Crepes? Crepes Very thin and very delicious! Can be made sweet or savory. Dust with powdered sugar or fill with your favorite crepe fillings.

Material


  • 1 1/2 cups (350ml) milk (preferably 2%)
  • 1 cup (142g) of all-purpose flour (spoon and level for measuring)
  • 2 teaspoons sugar
  • 1/4 teaspoon salt
  • 3 Tbsp (42g) unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 3 large eggs
  • Butter for the pan
  • Sugar powder, for dust
  • Desired patch (optional)


Instructions


  • Add milk, flour, sugar, salt, butter, vanilla, and eggs to the blender, then blend at low speed until evenly mixed, about 10 seconds.
  • Rub the sides and bottom of the blender if there is sticky flour and blend a few seconds longer.
  • Cover and chill for 1 hour (or overnight if desired).
  • Heat a non-stick skillet 10 inches on medium heat.
  • Stir the mixture with the spoon gently only to blend the separate layers.
  • Light butter pan, then lift the pan and pour 1/4 cup of dough into the pan, immediately tilt and stir the pan in circular motions to coat the entire bottom of the pan with the mixture.
  • Cook until golden brown at the bottom then use an offset spatula to lift the edge of the crepe, take the tip of the crepe with your fingertips and turn the crepe on the opposite side. Cook until golden brown spots appear on the bottom.
  • Transfer to wire rack. Repeat until all the dough runs out (if necessary, reduce the burner temperature slightly).
  • Dust the crepes with powdered sugar and roll or fold into a fourth, or fill with the desired fillings then fold.
