Set aside 1/2 cup apple pie filling. Spread remaining filling into the bottom of the prepared graham cracker crust.
In a medium bowl, beat cream cheese, sugar, eggs, and caramel or vanilla extract until well combined and creamy. Spread over apple pie filling in pie crust.
Bake at 350 degrees for 40 - 50 minutes or until center is set and firm. Allow to cool completely.
In a small saucepan, heat reserved apple pie filling and caramel ice cream topping over medium low heat until well combined, only about 2 minutes. Pour evenly over top of cooled cheesecake.
Allow topping to cool about 15 minutes before slicing and serving. Store leftover cheesecake in the refrigerator.
