Caramel Apple Pie Fudge
Ingredients:
- 12 gingersnap cookies, crushed fine
- 3 cups white chocolate chips
- 1/2 cup apple pie filling
- 3/4 cup butter
- 1 cup heavy cream
- 3 cups sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/2 teaspoon salt
Instructions:
- Line an 8 x 8 square baking dish with foil or parchment paper.
- In a large mixing bowl, stir together gingersnap cookie crumbs, white chocolate chips, and apple pie filling.
- In a large saucepan, heat butter, cream, sugar, spices, and salt over medium heat. Stir occasionally to evenly melt butter.
- Once mixture comes to a full rolling bowl, continue to cook stirring constantly for 4 minutes.
- Pour caramel mixture over chocolate chips. Beat with a hand mixer until chocolate chips are completely melted and batter is smooth.
- Pour into lined baking dish. Refrigerate at least 3 hours before slicing into pieces. Store in a container with a lid.
