2-Ingredient Banana Pancakes
INGREDIENTS
- 1 medium ripe banana
- 1 large egg
- Canola oil
- Butter, for serving
- Syrup, for serving
INSTRUCTIONS
- Heat griddle or nonstick pan over medium heat.
- Mash the banana in a bowl until smooth. Mix in the egg.
- Once pan is hot, lightly oil with canola oil. Once oil is hot, add no more than 3 tablespoons of batter to the griddle and cook, until golden brown (about 2 minutes per side).
- Carefully flip the cakes with a flat spatula.
- Serve with butter and syrup.
Carrot Cake Pancakes
INGREDIENTS
- 2 medium ripe bananas
- 1 large egg
- 1 medium carrot, peeled and grated
- 1/2 cup yogurt
- 1/4 teaspoon ground cinnamon
- 2 teaspoons honey
- Coconut oil, for cooking
- Fresh berries, for serving
INSTRUCTIONS
- Heat griddle to medium heat.
- Mash bananas until smooth in a medium bowl, then stir in egg, carrot, yogurt, cinnamon, and honey.
- Add 2 teaspoons coconut oil to the hot griddle to melt. Once hot, add no more than 3 tablespoons of batter to the griddle and cook, until golden brown (about 2 minutes per side).

- Serve with sliced bananas and syrup.

- 1/2 cup cottage cheese
- 2 tablespoons real maple syrup
- 1/2 cup fresh blueberries

- In a large bowl, mix together eggs, flour, baking powder, cottage cheese, and maple syrup. Stir in blueberries.
