INGREDIENTSFOR LEVELS


  • 2 1/2 c. Crushed short bread cookies
  • 6 tbsp. butter, melted
  • 1 teaspoon. Sugar
  • a little salt


FOR CARAMEL


  • 1 1/3 c. Sugar
  • 3 tbsp. corn syrup
  • 2 tsp. vanilla
  • 1/4 c. water
  • 1/3 c. thick cream
  • 3 tbsp. sour cream


FOR GANACHE


  • 1 1/2 c. chocolate chip
  • 3/4 c. thick cream
  • Sea salt chips, for decoration



DIRECTION



  • In a large bowl, mix the cake, butter, sugar, and salt, then mix until the butter is fully mixed. Press into a pie plate and set aside.
  • In a medium saucepan over medium heat, mix sugar, corn syrup, vanilla and water. Bring to a boil and cook, without stirring, until the candy thermometer reads 340 °. Remove the pan from heat and stir with thick cream and sour cream. Chill to cool, 3-4 hours.
  • Place chocolate chips in a medium heat-resistant bowl. In a small saucepan over medium heat, heat the cream until the cream begins to boil. Pour in the chocolate and let stand 5 minutes before whisking until smooth.
  • Pour the ganache on top of caramel and spread it evenly. Sprinkle with peeled sea salt and chill until cooked, about 1 hour. Serve.
