Classic Chocolate Mousse

"The secret to this classic Chocolate Mousse is made with egg yolks, sugar, and thick cream.
INGREDIENTS
- 6 ounces (170 g) of semisweet chocolate, finely chopped,
- 6 tablespoons (89 g) unsalted butter, diced
- 4 large egg yolks
- 1/4 cup (50 g) granulated sugar
- 2 teaspoons of vanilla extract,
- 1 cup (240 ml) thick cream
- sweet whipped cream, chocolate shavings and fresh strawberries for garnish, optional
INSTRUCTIONS
- In a heat-resistant little bow, combine chocolate and butter. Place the bowl on a pan of almost non-boiling water. Stir constantly until the chocolate is melted and smooth. Remove from the heat but leave the pot of boiling water on the stove.
- In a medium heat-resistant bowl, beat the egg yolks and sugar until they are well mixed. Place the bowl on a pan of almost non-boiling water and stir for about 5 minutes, until the mixture turns pale and becomes a bit stiff. Remove from fire.
- Stir in the vanilla followed by the chocolate mixture. Stir for a few more minutes so the mixture turns cold, then set it aside to cool to room temperature.
- In a large bowl, whip the cream to the soft top. Beat 1/4 whipped cream into a cold chocolate mixture. Use a silicone spatula to gently fold the remaining whipped cream.
- Divide the mousse between four 6 ounces of ramekin and let it cool until ready, about 1 hour.
- Garnish with whipped cream, chocolate shavings, or strawberries if desired.
NOTE
- Bitter chocolate can be used instead of semisweet chocolate.
- 1.5 ounces of coffee or alcoholic drinks can be used instead of vanilla extract.
