Cheesecake Stuffed Cookies

INGREDIENTSFOR COOKIES



  • 2 1/2 Butter butter sticks, softened
  • 1 c. Brown sugar
  • 1/2 c. sugar
  • 2 tsp. vanilla extract
  • 2 large eggs
  • 2 3/4 c. all-purpose flour
  • 1 teaspoon. baking soda powder
  • 3/4 tsp. salt
  • 2 c. semisweet chips


TO CHARGE CHEESE CREAM


  • 12 ounces of cream cheese, soft
  • 1/2 c. powdered sugar
  • a little salt



DIRECTION
  • Preheat the oven to 375º and coat a large baking sheet with baking paper.
  • Make cheese cake filling: Mix cream cheese, refined sugar and salt in a small bowl. Stir until evenly mixed. Cover with plastic wrap and chill until tight, about 30 minutes.
  • Make cookie dough: Using an electric mixer, beat the butter and sugar until light and fluffy, about 2 minutes. Gently shake the vanilla and egg extract.
  • In a separate bowl, mix the flour, baking soda, and salt. Stir in the butter-sugar mixture. Fold in chocolate chips. Place the mixture in the refrigerator to harden, 10 to 15 minutes.
  • Make cookies: Take about one tablespoon of cake mixture and spread it out into a flat circle like a pancake. Spoon about 2 teaspoons of cheesecake in the middle. Form one more spoonful of the cake mixture into a flat circle and place it on top of the contents. Pinch the edges to seal, then roll the filled dough into a ball.
  • Bake the cake for 12 to 15 minutes, or until it's a little golden.
