TO DIE FOR CARROT CAKE



 "Really the best carrot cake you have ever tried! It's easy to make and as an added bonus, there's no oil or butter! I know this cake will quickly become a family favorite!

MaterialCake:One


  • 1 1/4 cup of applesauce or unsweetened oil, this is what my Nana uses
  • 2 glasses of granulated sugar
  • 3 room temperature


Two


  • 2 cups of all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tsp cinnamon


Three


  • 2 cups of grated carrots
  • 1 cup grated sweet coconut
  • 1 cup of chopped nuts optional
  • 1 teaspoon vanilla
  • 1 cup of crushed pineapple alms don't dry! {Use pineapple on JUICE instead of syrup}


Cream Frozen Cheese:


  • 1/2 cup softened butter
  • Softened 8 ounce cream cheese
  • 1 teaspoon vanilla
  • 1 pound of powdered sugar
  • top it with roasted pecans or coconut if desired


Instructions


  • Preheat the oven to 350 degrees.
  • Combine ingredient # 1. Add ingredient # 2. Mix ingredients # 3.
  • Pour into 9 x 13 light grease, two 9-inch pans or three 8-inch pans. (This cake is very moist so cutting the parchment for the bottom of your pan will make sure they don't stick. I prefer using a non-stick cake spray that has flour in it to remove the cake easily.)
  • Bake for 35-40 minutes for 9x13 and 9-inch pans and 25-30 minutes for 8-inch pans. You're looking for a toothpick that is inserted to come out clean.
  • Let the cake cool for 10 minutes on the pan and then lift it to the cooling rack and allow it to cool completely.


For freezing:


  • Beat the butter and cream cheese until nice and fluffy. Add vanilla and refined sugar and shake until nice and smooth.
  • Turn the cake onto a cake plate or holder.
  • Apply a large spoonful of frosting and spread it ...
  • Place the second cake gently on top and continue freezing. Repeat with the third cake if you make three.
  • Chill for one hour before serving for best results.


Note


  • Frosting recipes can be duplicated if you plan to cut the border and add lots of frosting garnishes to the top of the cake.
