Luxury Strawberry Jelly Cake

INGREDIENTS



  • 11 strawberries
  • 1 7-inch round cake


Strawberry Jelly:


  • 5 ounces of strawberries, cut into pieces
  • 1 1/2 tablespoons of sugar
  • 1/2 tablespoon of gelatin powder plus 1 tablespoon of water


Lemon Gelatin:


  • 1 3/4 cup of water
  • 3 tablespoons of sugar
  • 5 sheets of gelatin, soaked in ice water
  • 1/3 cup of lemon juice
  • 2 tablespoons of honey
  • Gold leaf, optional


Whipped Cream:



  • 3/4 tablespoon of granulated sugar
  • 1/2 tablespoon cherry brandy
  • 3/4 cup thick cream



INSTRUCTIONS



  • In a 7-inch round cake pan, add a round cake. Align with a whole strawberry. Put aside.
  • In the food processor, add the ingredients of strawberry jelly and blender to combine.
  • Cover a 4-inch round cake pan with plastic wrap. Pour in the mixture of strawberry jelly and chill until hardened.
  • In a mixing bowl, add sugar, brandy cherries, and thick cream. Let stand for 8 minutes, then whip to the soft peak. Top set strawberry jelly with a layer of whipped cream and chill in the freezer until cooked.
  • In a pan over medium heat, add water and sugar. Add the soaked gelatin and allow it to melt. Toss to join. Add lemon juice, honey, and golden leaves, stir until smooth. Pour one third of the gelatin mixture over the sponge cake layer. Add the strawberry jelly set, and cover the cake with the remaining gelatinous mixture.
  • Place it in the fridge until ready. Remove from print. Add garnish and serve.
