BLUEBERRY BREAD PUDDING

Material



  • 3 large croissants, or white bread
  • 1 cup of blueberries, fresh or frozen
  • 8 ounce cream cheese, soft
  • 2/3 cups of sugar, see note
  • 2 eggs
  • 1 teaspoon vanilla, or almond extract
  • 1 glass of milk
  • 2 tablespoons of powdered sugar, optional to be served



Instructions




  • Preheat the oven to 350 ° F / 175 ° C. Brush the pan 9 inches / 22 cm square and set aside.
  • On a cutting board, cut the bread into 1 inch slices.
  • Place the bread in a prepared skillet and sprinkle the blueberries evenly on top.
  • In a medium bowl, beat cream cheese, sugar, eggs, and vanilla until smooth.
  • While mixing, gradually add milk to make a consistency mixture that can be poured.
  • Pour the mixture evenly over the slices of bread and blueberries.
  • Bake for 30-40 minutes until swollen and golden. Check half way and cover a little with foil if the bread is too brown.
  • Remove from the oven, set aside until cool for 5 minutes.
  • Dust with optional powdered sugar. Serve & enjoy!
