Frozen Cheesecake bite

INGREDIENTS


  • 12 ounces of semi-sweet chocolate chips
  • 1 teaspoon. coconut oil
  • 8 ounces of cream cheese, soft
  • 2 tbsp. sour cream
  • 1/3 c. powdered sugar
  • 1 teaspoon. raspberry liquer
  • a pinch of halal salt
  • 12 raspberries



DIRECTION



  • In a medium bowl, add the microwave chocolate chips and coconut oil until they melt.
  • Pour about one teaspoon of melted chocolate into each ice cube mold. Use fingers or a spoon to completely cover the sides of the mold. Freeze until solid, about 10 minutes.
  • In a medium bowl, mix cream cheese and sour cream and shake with a hand mixer until smooth. Add powdered sugar, raspberry and salt liquor, then stir until it expands.
  • Fill each ice cube mold about half with cream cheese, then press raspberry into the center of the mixture. Fill the remaining mold with a mixture of cream cheese, then top it with melted chocolate.
  • Freeze until solid, about 45 minutes.
  • Turn the ice cube tray over to remove it. Serve cold.
