Frozen Cheesecake bite

INGREDIENTS
- 12 ounces of semi-sweet chocolate chips
- 1 teaspoon. coconut oil
- 8 ounces of cream cheese, soft
- 2 tbsp. sour cream
- 1/3 c. powdered sugar
- 1 teaspoon. raspberry liquer
- a pinch of halal salt
- 12 raspberries
DIRECTION
- In a medium bowl, add the microwave chocolate chips and coconut oil until they melt.
- Pour about one teaspoon of melted chocolate into each ice cube mold. Use fingers or a spoon to completely cover the sides of the mold. Freeze until solid, about 10 minutes.
- In a medium bowl, mix cream cheese and sour cream and shake with a hand mixer until smooth. Add powdered sugar, raspberry and salt liquor, then stir until it expands.
- Fill each ice cube mold about half with cream cheese, then press raspberry into the center of the mixture. Fill the remaining mold with a mixture of cream cheese, then top it with melted chocolate.
- Freeze until solid, about 45 minutes.
- Turn the ice cube tray over to remove it. Serve cold.
