Rocky Road Brownies





Ingredients


  • 1 cup Butter (softened)
  • 2 cups Sugar
  • 1 cup Brown Sugar
  • 4 large Eggs
  • 2 teaspoons Vanilla
  • 1 cup Flour
  • 1/2 cup Cake Flour (if you don't have cake flour, you can still use all-purpose flour)
  • 1 cup Cocoa Powder
  • 1/2 teaspoon Salt
  • 2/3 cup Chocolate Chips

Rocky Road Topping:

  • 1 10-ounce pkg. Mini Marshmallows
  • 1 cup Semi-Sweet Chocolate Chips (may use more if you want it extra decadent)
  • 1 cup Chopped Walnuts

Instructions

  • Preheat oven to 350 degrees. In a large mixing bowl, cream together butter, sugar, and brown sugar for 3-4 minutes or until light and fluffy. Add eggs one at a time, mixing well after each addition. Add vanilla.
  • Stir in flour, cake flour, cocoa, and salt until mixed together. Fold in chocolate chips. 
  • Pour into 9 x 13 pan and spread evenly. Bake for 28-32 minutes. Remove from the oven and sprinkle marshmallows, chocolate chips, and walnuts evenly all over the top. Return to oven and bake for 5 minutes longer, or until the marshmallows are soft and begin to melt.  
  • Let sit for 10 minutes before cutting. For easier cutting, place in the freezer for 15 minutes.  Also, dip a sharp knife into hot water before slicing.
