GRILLED CHICKEN AND BURRITOS AVOCADO



INGREDIENTS


  • 3 avocados are cooked, peeled and sliced
  • 1 lemon juice
  • 1/4 teaspoon of fine sea salt
  • 1/4 teaspoon of freshly ground black pepper
  • 1 pound of grilled chicken breast, sliced
  • 1 cup of grated cheese (whatever type you like)
  • 1/4 cup of fresh coriander, chopped + a few more for decoration
  • 1/2 teaspoon of chili powder
  • 6 flour tortillas (10 inches)
  • 6 tablespoons of sour cream or Greek yogurt


INSTRUCTIONS


  • Place the avocado in a large bowl. Pour lemon juice on top to prevent it from changing color. Season with salt and pepper. Add grilled chicken, grated cheese, cilantro and chili. Stir to join.
  • Heat tortillas according to the package instructions. Working one by one, apply 1 tablespoon of sour cream to each tortilla. Place 1/6 of the fill in the middle of each tortilla. Bring the bottom edge of the tortilla firmly on top of the filling, fold it on the side. Continue rolling until the top of the tortilla is reached. Repeat until all ingredients are used.
  • Heat the grill pan. Bake the burrito on medium heat for about 3 minutes on each side, until the cheese melts. Remove from the fire.
  • Place your burrito on a serving plate, sprinkle with the remaining cilantro leaves. Serve hot with added lemon or lime, Greek yogurt or your favorite sauce.
