3 medium carrots, peeled and cut in half lengthwise

INSTRUCTIONS
Preheat the oven to 325 F (use the grill function if you can).
Place carrots on a baking sheet. Drizzle with olive oil and season with salt and pepper. Place it in the oven. Bake (or grill) both sides for 5-6 minutes, or until golden. Remove from heat and set aside until cold.
To serve it, for the leaves of arugula between two serving bowls. Add carrots and add goat cheese. Drizzle with lemon juice and season with salt and pepper. Sprinkle roasted sunflower seeds.
