sweet martabak
How to make soft, porous *martabak manis* (sweet stuffed pancake) at home using a non-stick skillet (foolproof method):
Batter Ingredients
• Medium-protein wheat flour: 200–250 grams
• Granulated sugar: 3–4 tablespoons (50 grams)
• Powdered milk: 1 tablespoon
• Chicken egg: 1 (either the yolk only or the whole egg)
• Salt: ¼ teaspoon
• Vanilla (liquid or powder): To taste
• Water: ±200–300 ml
• Baking powder: ¼ teaspoon
• Baking soda: ¼ teaspoon
Topping Ingredients
• Margarine or butter (for spreading)
• Sweetened condensed milk
• Chocolate sprinkles, grated cheese, or chopped peanuts
Preparation Steps
1. Making the base batter:
• Combine the wheat flour, granulated sugar, powdered milk, salt, and vanilla in a mixing bowl.
• Gradually add water while stirring with a whisk or spatula until the mixture is free of lumps.
• Add the eggs to the batter and stir until well combined, ensuring the texture is smooth and elastic.
2. Resting the batter:
• Cover the container and let the batter rest for 1 to 3 hours to allow for a light fermentation process (or at least 30–60 minutes).
3. Adding leavening agents:
• Just before cooking, dissolve the baking powder and baking soda in a small amount of water, then pour this into the batter and mix well.
4. Cooking in a pan:
• Heat a heavy-bottomed pan (or a non-stick pan) over medium-low heat until it is thoroughly heated.
• Pour the batter into the pan, then gently press or nudge the edges with a ladle to create a crispy rim.
• Cook over medium heat until bubbles (pores) appear across the entire surface.
5. Adding sugar and covering:
• Once the pores have formed evenly, sprinkle a little granulated sugar over the top.
• Reduce the heat to the lowest setting, then cover the pan until the top is fully cooked and no longer wet.
6. Adding toppings and serving: • Remove the cooked *martabak* from the pan and brush the surface with margarine or butter while it is still hot.
• Cut it into two halves, then add sweetened condensed milk and your choice of toppings, such as cheese or chocolate sprinkles.
• Stack the two halves together, brush the outer crust with more margarine, and then cut into pieces as desired.
