Orange Yogurt Cake

The taste of yogurt yogurt bread with candied oranges and orange glaze
INGREDIENTS
- 1 1/2 cups of all-purpose flour
- 2 teaspoons of baking powder
- 1/2 teaspoon halal salt
- 1 cup of Greek yogurt
- 1 cup of granulated sugar
- 3 eggs from two oranges
- 1 teaspoon of vanilla extract
- 1/2 cup of vegetable oil
- 1 cup of confectioner's sugar
- 2-3 tablespoons of fresh orange juice
- 1 blood orange
- 1/2 cup sugar
- 1/2 cup water
INSTRUCTIONS
- Preheat the oven to 170C / 350F. Brush 8.5 inches x 4 inches of flour and set aside.
- In a small bowl, mix flour, baking powder, and salt. Shake to combine.
- In a stand mixer bowl comes with a whisk attachment combining yogurt, sugar, eggs, orange peel, orange juice, and vanilla. Shake to combine. With a mixer running low, add dry ingredients to just combine it. Then pour the vegetable oil into the mixture and stir until evenly mixed.
- Pour the mixture into a baking pan and bake in a preheated oven for about 50 minutes, or until the toothpick inserted into the center comes out clean.
- To make candied orange slices, wash and dry the oranges thoroughly. Cut the orange in half lengthwise, then use a sharp knife to make very thin orange slices. Pry any seeds using a toothpick. Mix sugar and water in a medium saucepan over medium-high heat. Heat the mixture until the sugar has dissolved. Add the orange slices to the mixture so that they are in one layer, reduce the heat to medium-low and simmer for about 20 minutes, rotate the slices at least once so that both sides are sweetened. Remove from fire. Allow the air to dry on the cooling rack (place a few paper towels under the rack to catch syrup) until it's ready to garnish.
- When the cake is really cold, mix sugar and orange juice into a small bowl and stir until smooth. Adjust consistency as needed with extra juice or confectioner's sugar. Drizzle the glaze over the cake and decorate with sliced candied oranges. Let stand briefly until the glaze sets. Slice and serve
