Giant Rolo Cake

INGREDIENTS



  • 1 box of the devil food cake mix, plus the ingredients mentioned in the box
  • 1 15 ounces. caramel jar
  • 1 1/2 c. thick cream
  • 3 c. chocolate chip



DIRECTION



  • Preheat the oven to 350 °. Row of four 8 "baking pans with parchment paper then spread with cooking spray. (Or, you can make a large number of layer cakes.)
  • Prepare the cake mixture according to the package instructions, then divide the mixture between the pans. Bake until a toothpick inserted into the center comes out clean, about 20 minutes. Let the cake cool for 10 minutes in a pan, then turn it on the cooling rack to cool completely.
  • Using a 4 "biscuit cutter, cut the center of two cakes. Freeze all the cakes for about an hour.
  • Meanwhile, make Ganache: Place chocolate chips in a heat-resistant bowl and set aside. Heat the thick cream in a small saucepan over medium heat. When the bubbles start to break the surface around the edge of the pan, turn off the heat. Pour the hot cream over the chocolate chips, stirring constantly until the sauce is smooth.
  • Place the first full layer of cake on a serving plate then spread the thin layer of Ganache on top. Top with the cutout layer, then spread the ganache around the hole. Top with a second cutout layer and spread the ganache around the hole. Pour caramel into the hole, spread the ganache around the middle, then cover with a second full layer of cake.
  • Using a serrated knife, carve it around the edge of the cake to form a Rolo shape. Cover the whole cake with ganache, then pipe the ganache around the middle of the cake to mimic Rolo.
  • Chill for at least 15 minutes to let the ganache be set before serving.
