Mediterranean Hummus Pasta Salad




Material

  • 12 oz penne rotini or other small pasta (I use Banza)
  • 2 cups of broccoli florets
  • 1 medium chopped pepper (I use multi-color)
  • 1 chopped onion (I use yellow)
  • ½ cup of kalamata olives
  • 1/4 cup of parmesan cheese
  • Salt and pepper to taste
  • To change:
  • 2/3 cups of Sabra hummus that I use are normal, but it tastes good!
  • 1 Tbsp Olive oil
  • 1 Tbsp Water
  • ½ teaspoon of lemon juice
  • Salt and pepper to taste


Instructions


  • Cook your pasta according to the instructions and desired consistency. Let cool.
  • In a large bowl, mix broccoli, pepper, onions, olives, cheese and salt and pepper. Pour in cold pasta, sauce and stir.
