Mediterranean Hummus Pasta Salad
Material
- 12 oz penne rotini or other small pasta (I use Banza)
- 2 cups of broccoli florets
- 1 medium chopped pepper (I use multi-color)
- 1 chopped onion (I use yellow)
- ½ cup of kalamata olives
- 1/4 cup of parmesan cheese
- Salt and pepper to taste
- To change:
- 2/3 cups of Sabra hummus that I use are normal, but it tastes good!
- 1 Tbsp Olive oil
- 1 Tbsp Water
- ½ teaspoon of lemon juice
- Salt and pepper to taste
Instructions
- Cook your pasta according to the instructions and desired consistency. Let cool.
- In a large bowl, mix broccoli, pepper, onions, olives, cheese and salt and pepper. Pour in cold pasta, sauce and stir.
