Chocolate and Peanut Cookies without Bake Cookies This is my new guilty treat! They are super easy to prepare (no need to cook) and you only need 5 real simple ingredients.

Material



  • 1 1/3 cup creamy peanut butter
  • 2 teaspoons of vanilla extract
  • 2 tablespoons of unsweetened cocoa powder
  • 2 cups unsweetened coconut flakes
  • 2 tablespoons of melted butter
  • 1 teaspoon of erythritol (optional)



Instructions



  • Prepare a large baking sheet with baking paper or non-stick silicone baking pan.
  • In a large bowl, mix the peanut butter, vanilla extract, melted jam, coconut flakes and cocoa powder, stirring until evenly mixed. (If you like your cake a little sweeter, please add 1-2 teaspoons of your favorite alternative sugar. We use Swerve.)
  • Spoon the mixture over the prepared baking sheet. Use the back of the spoon to gently shape each spoon into 3 "cakes.
  • Place in the freezer for 30 minutes to set.
  • Store in an airtight container in the freezer.
