Brown Butter Chocolate Chip Cookies

INGREDIENTS
- 130g of butter
- 100 g of caster sugar
- 150g of pink sugar
- 1 teaspoon fine salt
- 1 egg
- 1 teaspoon vanilla extract
- 100g of flour
- 50g strong white flour
- 1/2 teaspoon bicarbonate of soda
- 115g slices of milk chocolate
- 115g chunks of dark chocolate
- Peeled salt, for decoration
INSTRUCTIONS
- In a large skillet, melt the butter and stir for about 5 minutes, until it starts to turn brown. Place it in the refrigerator to chill for 30 minutes.
- In a large bowl, shake sugar, salt, and butter. Beat eggs and vanilla, beat then strain the flour and bicarbonate of soda, then fold the mixture with a spatula.
- Fold it into chunks of chocolate, then chill the dough for 30 minutes, or overnight (you don't need to chill the dough, but it improves the taste).
- Preheat the oven to 180 ° C / 160 C fan.
- Spoon the mixture with an ice cream spoon on a baking sheet lined with baking paper, leaving at least 4 inches of space between the cake and 2 inches of space from the edge of the pan so the cake can spread evenly.
- Bake for 10-12 minutes, or until the edges have begun to brown.
- Remove from the oven and sprinkle with scaly salt, then let it cool.
